Roman Urdu: Sabzi / Sabzee

Sabzi means the fresh vegetables traded in a sabzi mandi — onion (piyaz), potato (aloo), tomato (tamatar), garlic (lehsan), green chilli, gourds (lauki/tori), and leafy greens. Vegetables are highly perishable and price-volatile, so they auction at dawn (3–7 AM) in markets like Lahore Badami Bagh, Karachi Super Highway, and Multan Vehari Road. The adhati sells the kissan's sabzi lot by crate (peti) or jaali count, deducts kachra (spoilage), arhat, and labour, then settles on the same day's parchi.

Why does sabzi sell so early in the morning?+
Because vegetables wilt fast and retail shops need stock by morning. Sabzi boli runs roughly 3–7 AM in most Pakistani cities so beoparis and pharias can move the lot to shops the same day before it loses freshness and daam.
How is sabzi packed and counted in the mandi?+
By peti (wooden or plastic crate) for tomato, chilli and soft veg, and by jaali (mesh bag) for onion, potato and garlic. The lot is counted by number of peti or jaali, each at a standard fill weight, rather than weighed bag-by-bag like grain.
